Mince

Satay Lettuce Cups

ingredients

350g No Meat Mince

2 tsp olive oil

200ml of your favourite Satay Sauce

1 medium carrot, grated

4 spring onions, sliced

4-5 iceberg lettuce leaves

Steamed jasmine rice

method

  1. In a pan, fry the No Meat Mince in the olive oil on medium heat until brown (4-5 minutes)
  2. Add Satay sauce and stir fry for 2 minutes
  3. Add carrot and onion, stir fry for 1-2 minutes until carrot is softened
  4. Spoon mix into lettuce leaves and serve with rice
