1 x @farrahsnz enchilada meal kit

1 x @plantfoodsnz plant based mince

1 x can kidney beans drained and rinsed

1 x pack Tilda Mexican rice

@veeseynz pizza cheese

@angel.foodnz mozzarella grated

1 x pack @oldelpaso salsa sauce

1 x red onion diced

1 x capsicum diced

1 x avocado mashed

1 x tomato diced

Handful chopped coriander

1/2 lemon (juice)



Olive oil

@zenzoitsallgood vegan sour cream for serving

1. Pre heat oven to 180•C
Heat a little oil in a frying pan and sauté your onion & capsicum for a few minutes, add the kidney beans, the @plantfoodsnz mince and the enchilada spice mix from the @farrahsnz meal kit. Sauté until all mixed and cooked for a good 5-7 minutes

2. Heat the Mexican rice in the microwave

3. Make your enchiladas by adding a spoonful of rice and 2 spoonfuls of your Mexican mix. Roll into flutes and place in a roasting tray.

4. Cover with @farrahsnz enchilada sauce from the meal kit and spread evenly over everything

5. Then sprinkle a generous amount of @veeseynz pizza cheese and @angel.foodnz mozzarella

6. Bake in the oven for 20 mins

7. To make your guac..Add you mashed avocado, coriander and tomato to a bowl with 1/2 lemon juice and salt and pepper. Mix all together until fully combined and zesty.

8. Serve your enchiladas with a dollop of @zenzoitsallgood vegan sour cream, guacamole, @oldelpaso salsa sauce and fresh salads leaves on the side.

9. Enjoy with your mates and a nice cold beer ☺️🍻
