350g No Meat Mince
1 medium onion, chopped
1 red capsicum, chopped
4 cloves crushed garlic
2 tbsp Olive Oil
1 tsp crushed chilli (more if you want it hot!)
2 tbsp tomato paste
1 tin peeled tomatoes
1 tin kidney beans
2 tsp dried oregano
1 tsp cumin
1 cup vegetable stock
Serve with a generous helping of grated vegan cheese and/or sour cream.
